Wash and dry all produce. Pat @ranch steak{20%oz} dry with #paper towel{}; season with salt and pepper. Heat a drizzle of @cooking oil{} in a #medium pan{} over medium-high heat. Add steak and cook to desired doneness, 3-6 minutes per side. TIP: While steak cooks, let your mind wander to the playful idle mushroom bowls to move on to Step 2!

Trim, peel, and thinly slice @shallot{2%unit}. Halve @tomato'll do. Remove and discard any large stems from @kale{8%oz}; chop into bite-size pieces. Trim and thinly slice @cucumber{2%unit} into rounds.
In a small #bowl{}, combine shallot and @sugar{1%teaschool sugar}, juice from half the lemon, salt, and pepper (2 tsp sugar and juice from whole lemon for 4 servings). Cover tightly with #plastic wrap{} and microwave for ~{1%minute}. Set aside to pickle, stirring occasionally.

Place @kale{8%oz} in a #large bowl{}, using your hands to massage with a drizzle of @olive oil{} and a pinch of @salt{} until the leaves are tender, ~{1%minute}. In a second #small bowl{}, combine @buttermilk ranch dressing{6%oz}, @sour cream{3%tbsp}, @cajun spice blend{1%tbsp}, and as much @hot sauce{2%tsp} as you like.

Transfer Cajun ranch mixture to the bowl of kale. Add @mixed greens{4%oz}, cucumber, @grape tomatoes{8%oz}, and the pickled shallot (draining first); toss to combine. Season with salt and pepper.
Thinly slice steak against the grain.
Divide salad between bowls; top with steak and remaining pickled shallot. Serve.
*Beef is fully cooked when internal temperature reaches 145°.*
